Cauliflower pancakes are a quick and simple alternative to potato pancakes. They can be used as a snack or as a stand-alone dish. They taste great with thick, sour cream and parsley.

According to research, cauliflower has an anticancer effect. Moreover, cauliflower will help to protect against ulcers and help people with rheumatism.

Ingredients:

  • semi-cauliflower
  • 2 eggs
  • 4 tablespoons of flour
  • 2 tablespoons of natural yoghurt
  • parsley
  • rapeseed oil (for frying)
  • salt and pepper to taste
  • cream for decoration

Preparation:

Put cauliflower roses into a large bowl, rinse them and pour boiling water over them. You can hold them for a few minutes so that they will burn and soften a little. When the cauliflower has cooled down, blend it. Then in a large bowl mix thoroughly with flour, eggs, yoghurt, parsley and spices. Heat up the oil in the pan and apply the mixture to the pancakes with a tablespoon forming flat pancakes.

Fry them on each side for about 2 minutes. After frying, drain them from the fat and put them on a paper towel. Serve with cream and sprinkled with fresh parsley.
