Herrings are obligatory on the Christmas table. They are often served with onions or in cream, less often in Jewish or vinegar. In the recipe there is a proposal with baked beets, which add sweetness and acidity to the salad.
Beetroot is a wonderful blood-forming agent, long recognised by natural medicine. It prevents anaemia and, according to research, supports the treatment of leukemia. Dyestuffs contained in beet are very strong antioxidants and increase the absorption of oxygen by cells.
- 5 pieces of herring fillets (matias)
- 3 baked beets
- 1 large apple
- 1 large onion
- 3 tablespoons of cream
- 1 tablespoon of mayonnaise
- salt, pepper to taste
Wash the herrings, pour cold water and leave for 1 hour. While the herrings are wet, bake the beets by sprinkling with olive oil, honey and rosemary. Then drain the herrings and cut them into pieces of 2-3 cm. Dice beetroot, onion and apple, season and mix with cream and mayonnaise. Arrange the herring pieces on a platter and put a layer of cream and vegetables on top. You can also mix everything together into a salad.
